"Well cleaned and well cooked. That's all there is, really. For me, food isn't about security. I don't have comfort foods that automatically make me feel secure. Food is about adventure. It's supposed to be interesting, startling, tasty. It's supposed to tell a story from a culture, or a particular place on the planet. I'd much rather live dangerously and eat street food in some Third World city than a boring meal in a secure, hygienic, and safe restaurant."
